Pondiscio's perfect pumpkin pie
NOV 17, 2005 - He says it's taken him years but Mike Pondiscio has finally perfected the pumpkin pie. And just in time! Mike has generously shared his special formula featured as Recipe Of The Week in today's Marietta Daily Journal.
|
 |
|
Pondiscio's Pumpkin Custard Pie
1 small pie pumpkin (approx. 2 lbs)
1.5 cups sweetened condensed milk
3/4 cup granulated sugar
2 large eggs
3/4 tsp salt
1.5 tsp ground cinnamon
5/8 tsp ground ginger
1/4 tsp ground cloves
One 9" deep dish pie shell

|
|
|
Cut pumpkin in to quarters and discard seeds. Boil quarters until pumpkin meat is tender and soft. Scrape pumpkin meat from shell and into a food processor. Puree' pumpkin until smooth & creamy. An average pie pumpkin will yield approx. 4 cups of pumpkin filling. Measure 2 cups of puree' and set aside; put remaining pumpkin in freezer bag and freeze for next pie (or make 2 pies at once). Preheat oven to 350 degrees.
In a blender, mix pumpkin puree' and all other ingredients until blended thoroughly. Pour into pie shell. Place in center of preheated oven and bake for about 1 hour or until toothpick inserted in center comes out clean.
*The secret to this pie is the puree' and blending processes - the smoother the better!

Father-son challenge
JUNE 19, 2005 - Nothing beats spending Father's Day with your son on the volleyball court especially when your enterprising sons built it. Scot McLeod, left, with son Michael and Kevin Ouellette teamed with son Matt try out the new addition built as a gift to the neighborhood by M&M Landscaping. Michael and Matt, principals in M&M, conceived of the idea to build the court at their own expense and went to work after getting an ok from the Board. Besides staying busy with their landscaping business, the M&M boys are also fulltime students, Michael at Georgia Tech and Matt at Kennesaw State.

To be
or not to be blonde...
Maybe it's the salt in the air, the suntan oil, or the sand in your sandals that puts crazy ideas in some heads -- and on at least one head. On a Bunco Babes beach house weekend April 22-25 hosted by Laurel McLeod at their Myrtle Beach get-away, Sara Meyers wondered how she'd look as a blonde. The Babes were more than happy to help her find out. Besides fun with radical new hair designs, the Babes report having a wonderful time walking on the beach, going out to eat, outlet shopping, and hanging out with the Shaggers (Myrtle Beach is the home of the dance, the Shag, and a yearly festivities week in its honor). Babes on the beach trip besides Sara and Laurel were Randi Brooks (driving the big SUV that got them there) and Vickie Hawkins. |
